Quesadillas de Camarones

Ingredients
• Flour Tortillas
• 12 whole Large Shrimp, Peeled And Deveined
• 8 ounces, fluid Mexican Red Sauce
• 1 whole Large Onion
• 1 whole Red Bell Pepper
• 1 whole Green Bell Pepper
• 2 cups Cheese, Grated (Monterey Jack Is Best - I USED QUESO)
• 2 Tablespoons Olive Oil
• Salt To Taste

Preparation Instructions
  1. Pour red sauce over shrimp. Set aside.
  2. Chop vegetables into large pieces. Heat skillet over high heat and add olive oil. Cook vegetables over high heat until they start to get brown/black. Remove from skillet and set aside.
  3. Return skillet to high heat, dump in the shrimp with the sauce. Cook, stirring only occasionally, until shrimp is opaque. Add in a little water if the sauce gets dry. Remove from skillet and chop into bite-size pieces.
  4. In a separate skillet, heat butter. Place a tortilla in the skillet, then layer on ingredients: cheese, vegetables, and shrimp. Top with a little more cheese and a second tortilla. Cook on both sides, adding butter before flipping to the other side so the tortilla isn’t overly dry.
  5. Remove from skillet and slice into wedges. Serve with rice, beans, salsa, sour cream, guacamole—whatever you’d like!

    Easy Baked Oatmeal

    I came across this recipe on the Sonlight forums.  At the moment, I can't remember who originally posted it but when I have time I'll come back and give credit where credit's due.  I love this oatmeal because it's easy to fix, doesn't have to sit overnight, and has a texture that my oatmeal haters can tolerate.

    INGREDIENTS:
    3 cups rolled oats
    1 cup brown sugar (I use 3/4 cup and it's still good)
    2 tsp ground cinnamon
    2 tsp baking powder
    1 tsp salt
    1 cup milk
    2 eggs
    1/2 cup melted butter (1 stick)
    2 tsp vanilla extract
    3/4 cup dried cranberries (or to taste)

    DIRECTIONS:
    Preheat oven to 350F
    In a glass, microwave safe mixing bowl melt butter
    Add all ingredients, except oatmeal and cranberries, and mix together
    Stir in oatmeal and cranberries
    Pour into a greased 9x13 baking dish
    Bake in preheated oven for 40 minutes

    One of these days I'm going to top this with some crushed pecans.  I think that would make it a nearly perfect breakfast.

    Peanut Butter Brownies

    From Cooking with the Horse & Buggy People II

    • 3/4 cup shortening

    • 3/4 cup peanut butter

    • 2 1/4 cups sugar

    • 5 eggs

    • 1 1/2 tsp vanilla

    • 1 1/2 cups all-purpose flour

    • 1 1/2 tsp baking powder

    • 3/4 tsp salt

    • 1 1/2 cups chocolate chips

    • 3/4 cup chopped peanuts


    Put in a 10x15 pan at 350F for 30 minutes.
